The Irish Whiskey Corner, Bow St, Dublin 7. Believe it or not the Irish invented whiskey. Monks of the 6 th and 7 th centuries leaned a distillation process that has been used to manufacture perfume in Asia and turned it to what they considered a better use! The monks called it Uisce Beatha, Gaelic for “The Water of Life” , a description few Irish would find exaggerated. The licence was granted to Old Bushmills Distillery in 1608 and they are still turning out some of the best whiskey in the oldest licensed distillery in the world.
